Erin Crooks Lynch
Erin leads efforts at the Spring Green Campus relating to engagement at the campus farms, and educational programming through workshops, volunteer activities, and major events. Additionally, she serves as the host for the Hillside Farm retreat space. Erin and her partner Jeremy operate Enos Farms in Spring Green, a former farm-to-table and zero-waste catering business, and current pastured pig farm aiming to create excellent pork with a light carbon footprint-achieved through intensive rotational grazing and silage systems. Her passion for creating purposeful gatherings dates back to her time spent living in France, working at L’Etoile Restaurant in Madison, and exhibited through Enos’ widely known Harvest Moon Dinner. Erin loves watching chickens scratch, dance parties with her youngesters, and cooking curries for family and friends.
